Hi, I use this simply recipe when I have some unexpected guests or I know in advance I will not have much time to prepare something more elaborate. This recipe is delicious and seems like gourmet... may be it is.
Ingredients:
1 pepper. It can be red, green or yellow, or mixed.
1/2 lb crimini mushrooms (or white if you prefer less intense flavor)
olive oil or fine butter.
salt
pepper
Optional Ingredients:
Sour cream
chicken breast
tomato
Instructions:
0. wash your vegetables, I recommend using veggie-wash.
1. cut the pepper in a continual stripe, remove seeds and stem, and then cut the stripe in shorter stripes of 2 or 3 inches.
2. cut the mushrooms the way you like more, I like cubes or not very slim slices.
3. put some oil in the pan and do not let it overheat (medium heat for 10 or 12 secs), immediately add vegetables, salt and pepper, stir a little, cover the pan and let it cook for 3 or 4 minutes.
Instructions for optional ingredients:
3.a precook the chicken breasts in boiling water with salt and onions until the meat is soft and tender.
3.b put some oil in the pan and do not let it overheat (medium heat for 10 or 12 secs), immediately add the chicken breast in thin stripes or in cubes, add vegetables, tomato, salt and pepper, stir a little, cover the pan and let it cook for 3 or 4 minutes, then add the cream, put the fire to low and let it another 2 minutes. If you use tomato you may use little bit of extra salt, as tomato needs more salt.
I recommend serving it with Rioja or some other strong wine, because the flavor of this dish is very soft.
Also serve it with asian pears as the flavor will combine greatly and the grainy texture will do a fantastic contrast.
